I was undecided on what I should eat this evening, it was already 7PM and I wanted to avoid something too heavy. I love finishing my last meal with mostly vegetables, especially since I buy them fresh from a local farm, so I need to take advantage of this time of year and eat as many as I can! I was considering making a salad, but those creamy dressings looked too tempting, so I made a stir-fry instead.
I searched the fridge and found broccoli, cauliflower, carrots and a little bit of left-over cooked chicken. I preheated my frying pan on med-high heat while I prepared the carrots, broccoli and cauliflower, which made approx. one cup all together. Instead of using oil, I sprayed a bit of vegetable oil cooking spray (compared to Pam, there is no calories or fat),I added the mix veggies and a few pinches of La Grille Vegetable seasoning . After a minute or two of cooking, I added a little bit of water, enough to steam the vegetables for a few more minutes. They were cooked once I was able to poke a fork easier through the vegetables and they were still a bit hard. I added the left-over chicken I had in the fridge on the plate with the vegetables, approx. 1/8 cup. The heat from the cooked vegetables was enough to heat up the chicken without drying it.
When I sat down and tried the stir fry, I was surprise how it was bursting with flavors and delicious! I'm very happy that I didn't hide the natural flavors with a stir-fry sauce. This meal took me less than 5-minutes to prepare and cook, it also cost very little.
I found a clean German chocolate oatmeal recipe that I'm trying in the morning- I'll let you guys know how it turns out :-)
